A Twist to Lasagne Using Plantain

Lasagne is pasta in a form of wide strips, that is baked with cheese and meat sauce. It should be the oldest form of pasta, but it’s time to take a new turn on this popular Italian meal, giving it a tasty twist with plantain.  A good percentage of Nigerians love their dodo! This is a savoury pan dish everyone should try.

These are easy steps to follow for your pan of “pastelon de platanos maduros”. Just in case you don’t speak Latin, that means “ripe plantain casserole”.


  • 5 pcs plantain
  • 3 pcs garlic cloves
  • 1 pc onion
  • 1 pc green pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 pinches paprika
  • 2 tbsps tomato paste
  • 900 grams of beef minced meat
  • 1 cup of green olives
  • 2 pinches salt
  • 1 teaspoon black pepper
  • 2 tbsp tomato sauce
  • 1 pc Mamador classic seasoning cube
  • 4 pcs eggs
  • 4 tbsps Mamador Vegetable Oil
  • 2 tbsps Mamador Classic Spread
  • 450 grams Mozzarella cheese


  1. Preheat the oven to 350 F
  2.  Peel and cut the plantains lengthwise. Fry till they are golden brown and set aside.
  3. Chop the green pepper and half of the onions. Slice the olives. Beat the eggs and set aside.
  4. Place a frying pan on medium heat and pour in two teaspoons of Mamador oil to get hot. Add the minced meat to your hot oil till brown. Mix it with chopped onions (half), garlic, oregano, cumin, black pepper, paprika and salt. Stir continuously and add olives, tomato sauce, tomato paste and seasoning cubes. Leave to cook for 10 minutes.
  5. Grease a baking dish with butter and place some plantains as your base, making sure you cover up space. Spread the eggs over the plantains and cover it with cheese. Add about ⅓ of your cooked meat to cover and repeat this process three times until your pan is full. 
  6. Cover it up with cheese and bake for about 30 minutes.
